🥒 Zucchini Slice
Ingredients
- 2 zucchinis, grated
- 1 onion, finely diced
- 1 cup grated cheese
- 1 cup self-raising flour
- 5 eggs
- 125ml oil
- Salt & pepper
Method
Mix all ingredients together in a large bowl. Pour into a lined baking tray and bake at 180°C for 35–40 minutes until golden.
🫐 Blueberry Muffins
Ingredients
- 2 cups flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1 cup milk
- 1 egg
- 1/3 cup melted butter
- 1 cup blueberries
Method
Combine dry ingredients. Mix wet ingredients separately, then fold together gently with blueberries. Bake at 180°C for 20–25 minutes.
🍅 Garden Tomato Pasta
Ingredients
- 500g pasta
- 4 tomatoes, chopped
- 2 cloves garlic
- Fresh basil
- Olive oil
- Parmesan cheese
Method
Cook pasta. Gently fry garlic in olive oil, add tomatoes and simmer until softened. Toss through pasta with basil and parmesan.
🥕 Carrot & Apple Muffins
Ingredients
- 1 carrot, grated
- 1 apple, grated
- 2 cups flour
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 2 eggs
- 1/2 cup oil
Method
Mix ingredients gently until combined. Spoon into muffin tins and bake at 180°C for 20 minutes.
🌿 Herb Flatbreads
Ingredients
- 2 cups flour
- 3/4 cup yogurt
- 1 tsp baking powder
- Fresh herbs
- Salt
Method
Mix into a soft dough. Roll into rounds and cook in a hot frying pan until puffed and golden.
🎃 Pumpkin Soup
Ingredients
- 1kg pumpkin
- 1 onion
- 2 cloves garlic
- 4 cups stock
- 1/2 cup cream
Method
Cook onion and garlic until soft. Add pumpkin and stock. Simmer until tender then blend until smooth. Stir through cream before serving.
